Chicken Fajita Bake

With the size of our family we are always

looking for fast easy recipes that we can

whip up in a minute, and that will be full

of flavor.

 

This recipe our children asked if we can

add it to our family favorites and make it

on a regular basis.

 

I hope that you enjoy it as much as they do.


This is a go to for us here

on the homestead.

 

Prep/Cook Time: 1 Hours
Servings: 8 -10
Cooking Level: Easy

This recipe is doubled, cut recipe in half for smaller serving size.

 

Ingredients:


4 lbs Boneless skinless chicken breast​

4 Bell peppers (Green, Red or Yellow)

2 Onion (White or Purple)

2 tsp Paprika

2 tsp Chili Powder

2  tsp Garlic Powder

2  tsp Cumin

2 tsp Alpine Seasoning

Corn or Flour Tortillas (optional)

4-6 tbsp Olive Oil

16oz of your favorite shredded cheese

Optional Toppings:

Salsa

Refried Beans

Sour Cream

Lime

​Directions:


1. In a small dish mix together all the spices ​(Paprika, Chili Powder, Garlic Powder, Cumin, Alpine Seasoning) 

2. Place the chicken breasts in a 9x13 baking dish and sprinkle with seasoning on both sides.

(Use half of the seasoning for each side) 

4. Drizzle Olive oil over chicken and top with your sliced onions and peppers. 

3. ​Bake at 400 degrees for 30 - 45 minutes check the internal temperature of the chicken and cook until it reaches 165 degrees. 

5. Once chicken has reached 165 degrees pull chicken out and slice into thin strips and return to the baking dish, sprinkle with cheese and place back in the oven until cheese is fully melted. 

Note – If you would like to keep this low carb you can make a lettuce wrap or eat the chicken breast whole and do not slice it.
