This is a go to for us here

on the homestead.

Prep/Cook Time: 45+ Minutes
Servings: 6 – 8
Cooking Level: Easy

10 slices of bacon cut into bite size pieces. We always add more (you can never have too much bacon)
2 Cups of Red Potatoes, cubed
1 1/4 Cup onion, chopped. We like to use Yellow Onions, they really add flavor to the chowder.
1 Cup of Sour Cream.
1 1/4 Cup of milk
1 Can of Cream of Chicken Soup Click here to learn how to make your own Cream of Chicken from our friend at Little house living.
1 Can of corn (drained)
1/4 Tsp of Pepper
Small pinch of salt

Optional Toppings:

1. In a 3 quart sauce pan cook bacon over medium heat for 5-7 minutes. You do not want the bacon to be crispy.

2. Add the onion and red potatoes. You will want the potatoes to be tender this could take about 15 minutes or so. Poke them with a fork to test the softness.

3. Reduce heat to medium low and add the remaining ingredients, sour cream, milk, cream of chicken of soup, corn and pepper. Stir occasionally until cooked through.

4. Top with a garnish if you would like.

Note – You do not have to turn the heat down, you will just want to watch and make sure that you are not getting the milk and sour cream too hot too fast. I like to let this chowder simmer and allow the flavors to combine with each other.

Cook time will be longer when reducing the heat temperature
